Description:

Taking the time to plan, plant, and tend to a garden can be very fun and relaxing. But what do you do when it comes time to harvest and you are up to your eyeballs in produce? Watch N.C. Cooperative Extension, Currituck County Center’s Home Food Preservation Series, and learn to can all the produce you harvest. Access to these classes is free and you are able to review the content at your convenience. Check out the topics we will cover in each series and find the right class(es) for you. As an added bonus we are giving away digital copies of the Ball Blue Book and for local participants a ball home canning kit throughout the series!

Jam Making

Learn to make one of our favorite Blueberry Spice Jams. The principles for making this jam carry forward in almost all jam recipes. We will be demonstrating how to utilize a water bath canner to process the jars we prepare.

Pickling

In this class, we will pickle red onions which will be processed using a water bath canner. We will also discuss other types and processing methods for pickles.

Salsa

As a change of pace, we tried a delicious apple peach salsa recipe to process in a water bath canner. I will provide you with other recipe recommendations as well but this recipe is a great way to supplement your garden produce with other locally grown products.

Pressure Canning

Pressure Canning can be really scary because your neighbor’s grandmother’s sister had her pressure canner explode 30 years ago. Join us as we take the fear out of pressure canning. As a reminder, a lot of vegetables need to be preserved under pressure. There is no equivalent for water bath canning.

And as a bonus – anyone who signs up for any of the classes will receive information and a video on dehydrating fruit leathers! They are a family favorite.

To sign up today visit: https://foodpreservationondemand21.eventbrite.com. Access will be released on July 19th, 2021. You will have access to the video class you registered for as well as any handouts, or recipes utilized in the class. You are welcome to view all the classes or just the ones that pertain to your interests.
