Cooperative Extension of Polk County Family and Consumer Sciences Agents Renay Knapp and Jimmi Buell recently held a comprehensive demonstration of pressure canning techniques focused on canning meats and poultry. They taught attendees all aspects of pressure canner safety, differences between types of pressure canners, adjustment for altitude, canning both cooked and raw meats, and much more.
