National Egg Quality School

The National Egg Quality School is a non-profit, tax-exempt organization dedicated to providing continuing training in the area of shell egg quality and safety throughout the food production and marketing chain. Its purpose is to provide a curriculum that includes egg formation, abnormalities, interior and exterior egg quality, conserving egg quality, egg benefits to consumers, food safety, and up-to-date information and technologies to individuals with responsibilities or interest in assuring the production and distribution of high quality shell eggs throughout the marketing chain.

NC Egg Grading School for Small Producers Organic/Range

The class is directed at new and established small producers of natural/organic eggs, extension agents and purchasers of locally grown products. If you want to learn more about proper methods of grading and evaluating the internal and external quality of the shell eggs you produce, this workshop is for you. The course includes a review of the North Carolina Egg Law and components that apply to small producers.

Youth Market Turkey Show

The Youth Market Turkey Show is held in October during the North Carolina State Fair. The competition is open to all North Carolina youth between ages 5-18 (by June 1) still be enrolled in grades K-12 on the day of the show. Each participant picks up poults in June at the NC State Animal and Poultry Teaching Unit (3901 Inwood Drive, Raleigh, NC), raises the poults and enters their best bird into the show at the North Carolina State Fair.

HACCP Roundtable Meeting

The Prestage Department of Poultry Science at NC State would like to reestablish the HACCP Roundtable discussion between Industry, USDA and the department. The HACCP Roundtable is a way to gain meaningful information and address concerns that are affecting your establishments. The goal of the Roundtable is to communicate plant and inspection concerns as well as direct university resources to areas of the industry that will most benefit our stakeholders. Previously these meetings have successfully brought industry and the USDA together with university resources to overcome current struggles in food safety systems. We are happy to announce our first HACCP Roundtable will be on October 27, 2017. The meeting will begin at 10:00 am with industry discussion and USDA will join us at 11:30 for lunch and further discussion.

Cost: $20 (includes lunch and parking permit — permit will be sent via email to participates within 1 week of meeting)

NC Egg Safety Training for Small Producers

This training is for small producers selling eggs through Farmers Markets, Cooperatives and CSAs. The training provides instruction to improve producers’ understanding of egg safety. Training covers principles of egg safety plans, monitoring, current testing methods and consumer expectations, helping producers improve egg safety and quality. Attendees gain an understanding of the strategies needed to implement improvements to the safety of shell eggs.
