Soybean oil is one of the most prevalent oils used in the food industry. Soybean oil has high levels of the polyunsaturated fats linoleic and linolenic acid. Soybean oil is partially hydrogenated because these polyunsaturated fats are not stable at high temperatures. Partial hydrogenation increases levels of trans-fatty acids which have been associated with heart disease. The researchers were able to use biotechnology to produce soybeans with higher levels of oleic acid and reduced levels of polyunsaturated fatty-acids with a tool called TALEN (transcription activator-like effector nucleases.
