"Cream" Soup Mix
2 C. powdered nonfat milk
3/4 C. Cornstarch
1/4 C. instant chicken bouillon
2 tbsp. Dried onion flakes
1 tsp. Basil leaves
1 tsp. Thyme leaves
1/2 tsp. Pepper
Combine all ingredients, mixing well. Store in an airtight container until ready to use. To substitute for 1 can of condensed soup: Combine 1/3 cup of mix with 1-1/4 cups of cold water in a saucepan. Stir to moisten then heat over medium low heat until thickened. Add to casserole as you would the canned product. Equivalent to 9 cans of soup. Serves 18.
Can be used in casseroles or as the base for homemade cream soups with much lower fat and sodium content.
