Fruit Salad
2 cans unsweetened fruit, drained (fruit cocktail, peaches, pears, apricots, pineapple chunks).
2 C. fresh fruit cut into bite size pieces, (apples, pears (unpeeled), bananas, grapes, melon, strawberries,
or whatever you like rinsed in acid juice-lemon, orange or pineapple juice)
1 small box vanilla instant pudding*
Drain and combine all fruit, reserving juices. Add pudding mix to juice stirring well. Combine juice mixture and fruit. Toss and serve.*Sugar-free pudding mix can be substituted. Serves 8.
This one's a sure winner-quick, light, and refreshing.
