8 doves
1/2 cup flour
2 tsp. salt
1/2 tsp. pepper
1/2 cup cooking oil
1/3 cup green onion, chopped
1 cup water
1/2 cup sherry (optional)
parsley to garnish
Split doves and dredge in flour, salt, and pepper mixture. Heat cooking oil to 350
degrees and braise doves lightly. Place doves and excess cooking oil in roasting
pan with cover and add chopped onion and water. Bake at 350 degrees for 45
minutes or until tender. Baste often and add sherry during final minutes of
cooking. Add parsley as garnish. 4-6 servings.
