MORNING GLORY MUFFINS
2 cups all-purpose flour
1-1/3 cups sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
2 cups grated carrots
½ cup raisins
½ cup coconut (optional)
½ cup chopped pecans
1 (8 oz.) can crushed pineapple, drained
¾ cup vegetable oil or applesauce
6 egg whites, lightly beaten or
¾ cup egg substitute
2 teaspoons vanilla extract
- Combine first 5 ingredients in a large mixing bowl; stir in carrots and next 4 ingredients.
- Make a well in center of mixture.
- Combine oil/applesauce and remaining ingredients; add to flour mixture, stirring just until moistened.
- Place paper baking cups in muffin pans.
- Spoon batter into paper cups, filling two-thirds full; bake at 350 degrees for 25 minutes or until golden brown.
- Remove from pans immediately.
Yield: 2 dozen muffins.
