When we test samples, we classify the food by how it
is to be preserved. This classification determines the process and regulatory
requirements specifically for your product.
Many samples are preserved by their acidity. We classify these products
as acid foods or acidified foods. This depends on the pH and proportion
of individual ingredients and the final equilibrium pH of the product.
Others are preserved by alternative means such as dehydration, refrigeration
or fermentation.
Nutritional facts panels are not legally required for
most small producers. However, they are requested by many distributors
and customers.
