Learn how to stabilize your backyard stream, improve the natural environment, and enhance your property.  Learn about causes of streambank erosion and how to use native plants to create a healthy streamside environment.  Participate "hands-on" in enhancing an eroding streambank using grading, matting, and various natural plants at a local stream. Attendees will have the opportunity to watch, ask questions, and even plant trees and shrubs to stabilize and beautify a streambank. Wear your water shoes or boots!

This series of classes is designed for those who would like to learn how to garden, or switch to organic methods. Taught by Extension agents and invited experts, the class will consist of lecture/discussion time and visits to local gardens on some weeks. Topics include tips on seed starting, soils tests and facts, container gardening, composting, organic vegetable pest and disease management, weed control and more. Dig It! reveals the complex world of soil and how this underfoot ecosystem supports nearly every form of life on Earth. Developed in conjunction with the Soil Science Society of America and Smithsonian's National Museum of Natural History, this exhibition includes interactive displays, hands-on models and 54 soil monoliths representing each U.S. state, territory and Washington, D.C. Exclusive bonus elements highlight North Carolina agriculture, pottery and research projects from our Museum.

There will be two upcoming Pesticide Recertification Classes held for multiple categories. Commercial license holders whose license expires at the end of 2015 will need to get all required recertification hours by June 30. Private Applicator V trainings will be held at another time but Private Applicator X category will be provided at the listed trainings. The training will provide an in-depth review of pesticide labels and compliance issues concerning applicators and workers. The session will end with some fun with attendees participating in Jeopardy for Applicators game. This pesticide training will provide 2 hours of continuing education credits towards categories A, B, D, G, H, I, K, L, M, N, O, T, and X.

Monday, June 29, from 6 - 8 p.m. (2 Hours)
The training will include an interactive DVD presentation on Pesticide Safety in the Nursery and Landscape. The training will conclude with a hands-on sprayer calibration demonstration. This pesticide training will provide 2 hours of continuing education credits towards categories L, D, N, and X.

RC 131: Assessment & Identification of Riparian Vegetation - June 1-2, 2015 - Valle Crucis, NC. This two-day course will introduce students to vegetation assessment of riparian areas along streams that will potentially be restored. Existing riparian condition will be examined and discussed in both classroom and field settings. Topics will include stream bank stability from a vegetative perspective, evaluation of current plant inventory, invasive vegetation issues, and potential planting constraints. Identification of common riparian plants of North Carolina will also be discussed during field sessions. Students will be given handouts with information on how to identify individual riparian plants. 10 CEUs are approved by the NC Board of Landscape Architects; Course # 10037. 10.5 contact hours in Category 1-CF are approved by the Society of American Foresters. The economic success of fruit and vegetable production is highly dependent on post-harvest quality preservation. When marketing fresh fruits and vegetables, understanding the processes affecting product quality during storage and transportation is essential in obtaining a premium price for the product.

To assist growers in developing skills that will provide a competitive advantage within the fresh produce market, NCGT will offer a series of Postharvest Handling Workshops, in collaboration with NC State University Cooperative Extension. Participants will learn approaches and technologies to maintain product quality and extend shelf-life, limiting postharvest disorders and loss of sales.

Workshops will be led by Trish Tripp, NCGT Wholesaler Liaison, and Dr. George Wilson, Professor, Postharvest Physiology, NC State University, Department of Horticultural Science, with assistance from Cooperative Extension staff.

Geared toward producers selling into wholesale markets, as well as Extension Agents who are assisting growers with wholesale market expansion, this full-day, hands-on workshop will offer a variety of tools to assist growers in meeting US Grade #1 Standards. The introduction course is recommended for growers entering wholesale markets for the first time.

Demand for local grains continues to grow, especially for bread wheat and malting barley in western NC where a small grain mill and a malt house are committed to sourcing NC-grown grains. Local bakeries, breweries, and distilleries are using NC-grown and processed grains in their products.

Join us for field tours of bread wheat and malting barley at two mountain agriculture research stations. We will visit bread wheat trials in Waynesville at the Mountain Research Station, and learn about varieties that perform well in the southeast, how they are grown, and what end uses these varieties have in the state (bread, whiskey, beer). Then, we will meet back up at the Mountain Horticulture Crops Research and Extension Center in Mills River for lunch and a tour of two malting barley trials at the station. There we will learn about malting barley varieties for the Southeast and work being done to improve varieties and production. We will hear from owners of a local malting facility on how the barley is used and what the future may be for malt and breweries in NC. Finally, we will take a tour of the Sierra Nevada brewing facility - where some local malted barley is used in beer production.

Water Bath Canning: Tomatoes, Salsa and Such

Water Bath Canning: Tomatoes, Salsa and Such is a 4-hour hands-on workshop that addresses water bath canning with a specific emphasis on the proper way to home can tomatoes, salsa, tomato juice, and other tomato products in a water bath canner.

The workshop will begin with a basic discussion of home canning and the safety considerations involved with this method of food preservation. We will talk about the kinds of equipment needed for water bath canning* and how to operate a water bath canner properly. Participants will have the chance to practice hands-on techniques when they get into the Extension demo-kitchen to can tomatoes and prepare salsa. Participants will receive guidelines for acidifying all varieties of tomatoes safely and will go home with lots of canning recipes for tasty tomato treats!

• Please note: Tomatoes may be canned in a pressure canner, too, but this workshop does not address pressure canning. For more information about how to use a pressure canner, please see the description for the Basics of Home Canning workshop. Those who prefer using a pressure canner for canning tomatoes might still like to take this workshop, however, as it provides an update on current guidelines for preparing, acidifying, packing and processing tomatoes to keep products safe. Those guidelines would be the same whether you used a water bath or a pressure canner.

Water Bath Canning: Pickles, Relishes and More is a 4-hour hands on workshop that addresses water bath canning with a specific emphasis on the making of pickles, relishes and other pickled fruits and vegetables.

The workshop will begin with a basic discussion of home canning and the safety considerations involved with this method of food preservation. We will talk about the kinds of equipment needed for water bath canning and how to operate a water bath canner. Participants will have the chance to practice hands-on techniques when they get into the Extension demo-kitchen to prepare and can a variety of pickled products.

Participants will receive guidelines on making a variety of quick pack pickles as well as information on making fermented pickles and sauerkraut. Also included will be a discussion of firming agents, vinegar selection and making reduced-salt and reduce-sugar pickles.

Prerequisite: Taking the Basics of Home Canning Class is recommended before taking this class.

Introduction to Food Preservation: Freezing and Dehydrating

The Introduction to Food Preservation: Freezing and Dehydrating is a 4-hour program designed to teach the principles of safe freezing and food dehydrating.

The class will begin with an overview of the principles of freezing and dehydrating. Participants will learn about the safety aspects involved with each process and the key considerations when selecting equipment. The instructor will also have freezing and dehydrating equipment on display. Following the presentation, participants will move into the kitchen for some hands-on experiences, including freezing and dehydrating of a number of different fruits and vegetables.

If you know little about the principles behind freezing and dehydrating but think you might like to get more involved, then attending this program is a great way to get started. If you are already familiar with freezing and dehydrating but just want a refresher…you will find the program informative and fun, too.
